Turkey Ragu with Tagliatelli with Pitted Black Olives Recipe
Crespo Olive Minced Turkey Ragu with Tagliatelli is a one-pot wonder full of delicious ingredients including peppers, tomatoes and our Pitted Black Olives in Brine, for a tasty and rich Ragu.
Prep: 15 minutes Cook: 30 minutes Serves 4
500g turkey thigh mince
1 onion, chopped
1 red pepper, diced
2 cloves garlic, crushed
2 tsp dried oregano
75g Crespo Pitted Black Olives in Brine, sliced
400g can chopped tomatoes
3 tbsp sundried tomato paste
300ml chicken stock
Fry the turkey mince, onion, pepper, garlic and oregano in a large saucepan for 2-3 minutes to brown. Add the olives, tomatoes, tomato paste and stock and simmer, covered for 20 minutes, stirring occasionally. Remove the lid and cook for a further 5 minutes until the sauce has reduced a little.
Meanwhile, cook the tagliatelle in boiling water according to pack instructions, drain and serve with the ragu.
Try swapping the minced turkey with minced pork, beef or lamb. Great served with any shaped pasta.
